While many people enjoy our chickens, we have discovered over the years that the fox, hawk, cat, dog, weasel, raccoon... all love these tasty birds too! We keep them inside a pen that has a roof, four walls and a fence around it, to keep the predators away. The end result is a very tasty bird, with a greatly reduced fat content.
It seems there is something to consumption of chlorophyll (which our chickens get from eating grass all day) that changes the bird: when one of our birds is roasted or used to make soup, people comment on how little fat appears in the pan! Take caution and don't overcook, these birds don't usually need quite as long to cook as you might be used to. For best results, invest in an instant-read thermometer, and be certain to use!
